Title: 冷鏈與新鮮水果對手搖飲業者成本之影響-以木瓜飲品為例
The Impact of Frozen and Fresh Fruits on the Cost of the Beverage Industry – A Case Study of Papaya Drink

Abstract: 飲品中使用水果的比例近年來日益增加,但水果及亦受到氣候因素而影響價格,加上近年因極端天氣變遷日益加劇、國際地緣政治關係等因素,造成水果價格難以預測,作為飲料主要原料的水果價格漲跌,對於業者經營成本壓力不小。另一方面而言,農業生產者也遇到同樣問題,在各種因素影響下而造成的過剩滯銷或價高缺貨,也是對收入造成不穩定的主要因素。
本論文以自身產業網室木瓜為例,期以在成品與使用冷鏈產品之間尋求一個較為穩定投資方式,讓飲料業水果進價成本較為可控以利持續經營,農事生產者可以降低盛產滯銷時所造成的經濟損失,研究結果顯示,在飲品成本部分使用冷鏈木瓜時總效益為21使用新鮮木瓜總效益17,在飲品毛利部分冷鏈木瓜總效益39,新鮮木瓜僅24,可得知使用冷鏈木瓜對飲品毛利為最佳化之投資組合。整體而言在盛產時機大量收購木瓜,並完成截切加工冷凍保存,陸續再以冷鏈保存及配送供應給飲料業使用,可有效穩定原料成本。本研究結果可提供業者評估水果原料採用樣態之參考依據。
The proportion of fruits used in beverages has been increasing in recent years, but the price of fruits and fruits is also affected by climatic factors, coupled with the increasing extreme weather changes and international geopolitical relations in recent years, resulting in unpredictable fruit prices, and the price of fruits, as the main raw material of beverages, rises and falls, which puts a lot of pressure on the operating costs of the industry. On the other hand, agricultural producers also encounter the same problem, and the surplus or high price shortage caused by various factors is also a major factor in income instability.
This paper takes its own industrial network room papaya as an example, hoping to seek a more stable investment method between finished products and the use of cold chain products, so that the purchase cost of fruits in the beverage industry is more controllable to facilitate continuous operation, and agricultural producers can reduce the economic losses caused by abundant production and slow sales, the research results show that the total benefit of using cold chain papaya in the beverage cost part is 21 The total benefit of using fresh papaya is 17, the total benefit of cold chain papaya in the beverage gross profit part is 39, and the total benefit of fresh papaya is only 24. It can be seen that the use of cold chain papaya is an optimized portfolio for beverage gross profit. On the whole, papaya is purchased in large quantities at peak production times, and the cutting process is completed and frozen storage, and then supplied to the beverage industry through cold chain storage and distribution, which can effectively stabilize the cost of raw materials. The results of this study can provide a reference for the industry to evaluate the use of fruit raw materials.
