Abstract: | 本研究主要目的是探討近紅外光技術檢測單粒白米蛋白質之可行性。單粒白米蛋白質檢測係利用近紅外光多光譜影像系統,波長範圍分別為890、910、920、990及1,014 nm,並選擇10種不同白米樣本檢測單粒白米蛋白質含量。以多重線性迴歸(MLR)分析近紅外光多光譜影像之檢測結果顯示,選用890、910、920、990及1,014 nm之波長組合,MLR分析所得之單粒白米蛋白質含量校正模式之判定係數r2為0.821,預測模式之判定係數r2為0.464。結果顯示,應用近紅外光技術檢測單粒白米蛋白質在碾米加工線上具有可行性。 The objective of this research was to detect protein content of single rice kernel using near-infrared technique. The near-infrared multi-spectral imaging system with detection wavelength at 890, 910, 920, 990, and 1014 nm was adopted for measuring protein content of single rice kernel. The rice samples were collected from ten different cultivars to determine the protein content. The multiple linear regression (MLR) analysis was adopted for predicting rice protein content by near-infrared multi-spectral imaging. The coefficients of determination (r2) for the calibration and validation sets based on 890, 910, 920, 990, and 1014 nm were 0.821 and 0.464 respectively. The result shows that it is feasible to use near-infrared technique to determine protein content of single rice kernel in the rice milling processing. |
