Abstract: 國內肉品市場已經開放,養豬業者競爭對象不再侷限國內同行,因此導入國際安全標準概念,改善生產流程是重要課題。本研究主要目的借由丹麥現行的豬肉安全規範,探討源頭管控豬肉品質的生產模式,透過國內建立品牌業者的經驗,歸納臺灣養豬產業發展策略。本研究以「祥圃實業股份有限公司」為個案研究對象,相對傳統養豬業者,該公司已經累積相當源頭管理經驗;雖然限於客觀因素與丹麥標準之差異仍然存在,但探討其建立豬肉供應鏈、打造品牌之經營模式仍可提供國內業者參考。
祥圃實業以丹麥養豬業規範為標竿,致力生產「安心、新鮮」為核心價值的產品,由改善飼養環境、營養配方、豬種等科學管理開始,藉由整合上下游豬肉生產鏈,聚焦全程冷鏈供應系統,建立「究好豬(Choice Pig)」品牌。根據個案分析結果,提出我國養豬產業的發展策略,應該訂定與國際安全標準接軌的豬肉供應鏈生產流程,建立品牌為願景。建議政府要營造重視安全標準控管環境,包括鬆綁不合現狀的法令、制定與國際接軌的相關法規,方便商品進出口管理。其次推動屠體評價,提升肉品品質及導入溯源制度,培養國際競爭實力。
Taiwanese pork industry is no longer competing against local produces but foreign imports from all over the world, therefore it is imperative for domestic swine producers to adopt international safety standard and to differentiate added values in order to maintain competitiveness. This study aims to use “Nice Garden Industrial Co. Ltd.” as a case study to theorize a potential development strategy for the Taiwanese swine industry. The subject selected is a company which uses the Danish pork production standard as a bench mark and integrates supply chain to sell branded pork, “Choice Pig.”
The brand name of “Choice Pig” is a culmination of Nice Garden’s core values, determination and domain knowledge in animal science. The brand was created using the Danish pig production system as a bench mark, integrating the production chain from top (feed additives) to bottom (consumers), while focusing on full cold-chain delivery. Based on the result of such integrated process, it is concluded that the development strategy for the Taiwanese swine industry must include a fast adoption to the international safety standard, and value creation through brand differentiation. In addition, it is paramount for the government to raise awareness and create higher food safety regulations in order to maintain a competitive environment for all interest groups within the pork supply chain. Once the external environment is structured, the next steps would be to implement carcass grading system, to upgrade pork quality from quantitative to qualitative measurement and finally to full traceability system. It is then the local swine industry can compete with sustainable advantages.
