| dc.description.abstract | 星雞魚(Pomadasys hasta)為台灣砂質沿岸中常見的海水魚之一,其種苗生產技術已經建立,未來即可經人工養殖來供應大眾所需,然以往文獻中並未針對該魚種作營養上的探討,因此本實驗之目的即針對星難魚在半淡鹽水及全海水飼養下適切的蛋白質與脂質的需求,並藉由肌肉中游離胺基酸和核甘酸的分析來瞭解此二種鹽度下魚肉的風味。 以白魚粉及麵粉為主要的蛋白質和碳水化合物的來源,利用Cellulose將飼料調配成蛋白質35%、40%、45% (diet 1,3,5)等三種不同飼料,另外再分別添加5%魚油組(diet 2,4,6),如此製備六種不同粗蛋白質及粗脂質的飼料。試驗分成半淡鹽水與全海水處理,每個處理組二重覆,每個重覆10隻魚,蓄養在室內黑色塑膠桶(70×50×45cm),飼養時水深30cm容量約100L的水,實驗期間50天,水溫26.5℃?29℃,鹽度分別是20?22ppt及32?35ppt,並於第25天及第50天採樣,分別測其增重率、飼料效率、蛋白效率、活存率及分析粗蛋白、粗脂質、脂肪酸、遊離胺基酸及核甘酸。 不論半淡鹽水組或全海水組皆以diet5的增重率和飼料效率最高,最低則為diet6,另外添加魚油組在增重率、飼料效率及蛋白質效率除了diet4之外,皆比未添加魚油組來得低,且半淡鹽水組高於全海水組。肌肉中脂質的蓄積不因添加魚油及鹽度不同而影響,肝臟脂質含量則因飼料中脂質的增加而大量增加。肌肉與肝臟的脂肪酸組成深受飼料中脂肪酸組成的影響。綜合以上結果,初步認為半淡鹽水組蛋白質需求約在40%?45%之間,全海水組則在45%以上,脂質需求應在10%以下。以遊離胺基酸而言,添加魚油組總量高於未添加魚油組,且全海水組除diet2稍低外,其餘各組皆高於半淡鹽水組。然而以核甘酸而言,各組以IMP的含量最高,添加魚油組低於未添加魚油組,全海水組同時也低於半淡鹽水組。因此如同時考慮遊離胺基酸及核甘酸的呈味效果時,似乎無法定論結果,或許應以官能檢定來真正瞭解各組間風味的差異。 | zh_TW |
