| dc.description.abstract | 背景與目標:臺灣歷年最常發生食品中毒事件的攝食場所為供膳之營業場所,烹調從業人員的食品衛生行為直接影響到外食人口的食品衛生安全。本研究目的在於探討食品衛生行為的影響因子,評估是否能從食品衛生知識、食品衛生態度及其他相關因子著手介入而改善。
方法:本研究為一橫斷式研究,研究對象為臺北市的烹調從業人員,藉由臺北市政府衛生局核准辦理之衛生講習課程,對於所有參與課程者發放問卷填寫。結構式問卷內容包括人口特質、工作特性、生活型態、食品衛生知識、食品衛生態度及食品衛生行為之量表。利用結構方程模型評估食品衛生知識、食品衛生態度與食品衛生行為及其影響因子之間的整體相關性。 結果:自2012年6月至10月止,共有1,030位烹調從業人員參與研究。利用探索性因素分析將食品衛生態度量表分為「關心食品衛生態度」與「接受衛生講習態度」等兩個構面,而食品衛生行為量表分為「個人衛生管理行為」、「製程衛生管理行為」及「衛生自主管理行為」等三個構面。在結構方程模式中,教育程度越高,製程衛生管理行為增加0.28分;使用自主管理檢查表相較於未使用者,製程衛生管理行為增加0.15分。年齡越大、曾接受衛生講習者、曾接受健康檢查者及工作中有使用自主管理檢查表者,衛生自主管理行為分別增加0.15分、0.74分、1.32分、1.06分。 結論:食品衛生知識與關心食品衛生態度、個人衛生管理行為呈正相關。性別及教育程度顯著影響食品衛生知識。年齡對於接受衛生講習態度呈現顯著正向影響。教育程度及使用自主管理檢查表顯著影響製程衛生管理行為。年齡、衛生講習、健康檢查以及自主管理檢查表對於衛生自主管理行為呈現正相關。本研究結果可以應用於後續的食品衛生講習課程涉及及食品衛生管理政策之參考,以改善烹調從業人員之食品衛生行為,俾利保障全民食品衛生。 | zh_TW |
| dc.description.abstract | Background: Foodborne diseases most outbreaked at food-service over the years in Taiwan, hygiene practice of food handlers directly affected food safety of the public. The purpose of this study was evaluated the association between food hygiene knowledge, attitude, practice and the factors among the food handlers in Taipei City.
Methods: The study was cross-sectional designed. Participants were food handlers who joined in hygiene training courses of Department of Health, Taipei City Government. Each participant completed a structured questionnaire which includes demographic characteristics, work-related characteristics, lifestyle indcators, food hygiene knowledge, attitude and practice. Results: Data were collected during June to October 2012 involving 1,030 food handlers. The study identified latent constructs of attitude and practice, attitude was divided into two constructs that concerned about food hygiene and attended hygiene training courses, practice was divided into there constructs that personal hygiene, handling hygiene and self-management. Excellent self-management practice was correlated with oleder-age, hygiene training courses, health examination and self-management checklist, respectively was increased 0.15, 0.74, 1.32, 1.06. Conclusion: Food hygiene knowledge was positively related to attitude of concerned about food hygiene and personal hygiene practice. Gender and education level significantly affected food hygiene knowledge. Age had significant positive effect on attitude of attended hygiene training courses. Educational level and self-management checklist were associated with handling hygiene practice. Age, hygiene training courses, health examination and self-management checklist had positively relation on health self-management. This study provided evidence on how to computer decision of food hygiene policy and could improve the practice toward hygiene. | en |
