dc.description.abstract小麥已為台灣之主食之一,但在台灣卻屬小宗作物,近年在雲林縣喜願麵包施明煌總兼等人之推動之下,台灣各地已有小麥之契作與種植。然而小麥屬加工型作物,其品質會影響加工用途。前人研究多顯示栽培環境之不同會導致小麥品質有所差異,而台灣各地區之氣象條件不同,各地小麥品質如何,尚無明確之研究。
本研究以台中選二號為主,進行兩期冬裡作之試驗,實地至台灣各地14處麥田中架設溫溼度與光照度連續記錄器、測量抽穗期劍葉之SPAD 值(Chlorophyll meter value)、並收取各地所生產之小麥樣品進行品質分析,以探討小麥栽培氣象與品質間之關係。
試驗結果顯示台灣小麥充實期植冠內之相對濕度在各地區則皆高於80%,受溫度與日照影響大,撒播栽培之濕度也可能較條播高。濕度與小麥品質間相關性很高。高相對濕度使千粒重下降,雖然可能導致蛋白質濃度相對提升,但在超過 88% 以後蛋白質濃度也會有下降之現象。除了影響蛋白質濃度,高濕度也導致麵筋指數下降,影響蛋白質之品質,使麵團之抗張力下降。降落值是另一影響麵團品質之重要因子,其與麵團拉力性質之相關性高於蛋白質濃度,且更容易受環境影響。高溫高日照及收穫前兩週的低濕環境可顯著提升降落值。此外降落值與蛋白質含量具有顯著之正相關,但兩者受環境影響而變化之趨勢或程度卻不太相同,仍需更多研究來釐清。
  氣象因子與SPAD值 (葉綠素計值) 間具有顯著之相關性,如高溫及高日照使濕度下降,而濕度之下降可能間接使SPAD值提升,因此雖然溫度及日照與各成分間之相關性較低,但不能否認這些因子間具有交互作用,因而直接或間接的影響了小麥之品質,使各項因子在最後之麵團品質上皆有顯著影響。
  依本研究歸納,台灣冬裡作有四種主要環境,其中具有高溫、低濕與高日照之環境,其具有較高之麵團抗張力與耐攪拌性,此兩種麵團特性也是改善台灣小麥與進口小麥差異之關鍵。除此之外,本研究也發現在此環境中,蛋白質才明顯有隨抽穗期SPAD值上升而增加之現象。
  綜合本試驗之分析結果,本試驗進一步利用了複迴歸分析提供簡易之估算式,可針對該地區之環境估算可能之品質,以提早評估栽培措施,與可能之適製性及產銷方向。本研究之成果將可提供規劃台灣地區小麥之優良栽培操作程序 (Good Agricultural Practices) 的參考依據。
