| dc.description.abstract | 平價義大利麵餐廳於九○年代末期起逐漸大量出現，改變了台北市的美食地景，而義大利麵何以由過去的節慶飲食消費，進而成日常生活的飲食消費？一般常見的說法為其平價、簡單快速、口味親近的特質，然而本研究認為這些常見的說法忽略了義大利麵在台北市發展的脈絡。本研究試圖勾勒出台北市義大利麵發展的軌跡，因義大利麵逐漸滲入台北市日常生活飲食系統的過程，不應去脈絡地被思考為飲食在地化的結果，也不宜武斷地視為文化殖民化或文化全球化的後果，本研究主張要探究義大利麵在台北市的發展，應進行細緻的味覺之馴服與抵抗辯證過程的檢視。據此本研究進一步分析，促成義大利麵在台北市普及並非時空條件下的偶然，本研究找出其背後的動力，是行動者一連串看不見的策略運用，進而形成支持義大利麵發展的相關論述。最後，在行動者與結構的互動下，義大利麵的想像出現不斷的拉鋸，這種拉鋸體現在關於義大利麵的品味與正統性的爭議上。 | zh_TW |
